Coconut Brown Rice




Ingredients:
2 cups short grain brown rice
3-1/2 cups water
1/2 cup coconut milk
1 ts. salt
1/2 tsp nutmeg
1/4 tsp hot pepper flakes
1/8 tsp cardamom
1 T agave nectar or coconut sugar

(try adding shredded coconut)

Directions:
Combine all ingredients in a pot.  Bring to a boil.  Stir once.  Simmer, covered for 50 minutes. Take off heat and let sit, covered for 10 minutes. Fluff with a fork - serve and enjoy!
